Sprinkle Cake!
This one was for Sweet Sarah's 3rd birthday! She said she wanted a sprinkle cake, and I wanted a simple cake... I had just given birth to my son three months before, so I didn't have a lot of time to devote to an elaborate cake. It was quite funny because I went to the dollar store. (How fantastic is it that the dollar store sells candy sprinkles?!) and bought about seven containers of sprinkles. My husband just stood there laughing at me. (I am not very good at estimating how much I will need... but sprinkles save just fine. Its sugar.) As it turned out I only needed about half.... of ONE CONTAINER. I was left standing in my kitchen wondering what I will do with six extra jars of sprinkles... In any case, I was so proud of how great this looked, and how quick and easy it was (not to mention so, so fun to design!) and Sarah was absolutely thrilled that there were SO MANY SPRINKLES! And as an added bonus, it was PINK!

Banana Bread Cupcakes, Anyone?
So... I have to admit. I'm ashamed. I was in the grocery store today, and told my husband "I'll be right back. I want a cake." And came back with a Devil's Food Cake box mix and CANNED FROSTING! Sometimes you just need a cake out of a box, right? Except who did I see my husband chatting with when I came around the corner with my contraband baking goods, but my neighbor! I bashfully explained that I was feeling lazy and was really craving chocolate cake (I'm pregnant... I can use the lazy excuse every once in a while. Like every day for the next 7 months...) and she laughed and said "I won't tell if you don't." Ha! She's so sweet. Do you want to know another secret? These are from a box too! A good friend of mine who owns a catering business asked me to make these for the church potluck. She said she didn't have time to do it, and she knew I baked. "To make it a little more home made I add some fresh bananas and nuts to it." She said. As I was staring at the box and feeling like an imposter baker I came up with a brilliant idea to dress them up and make them fancy. Brown sugar, butter and candied walnuts adorn the tops, with a drizzle of vanilla scented glaze to bring it all together. Sshhh.... don't tell anyone.
Just as a P.S... if you order a cake from me, I guarantee that it will be fresh and from scratch! And if you just HAVE TO HAVE these delicious banana cupcakes I'll make them for you, from scratch, of course. (I can only cheat so often!) ;0)
